I Scream for Ice Cream!


I made my first attempt of an Ice Cream Cake last weekend..... As you can see, it didn't turn out the greatest. But it still tasted yummy!!!!!

I found a recipe for a sherbert layered ice cream cake in a Taste of Homes magazine, and thought I'd give it a try. I have always wanted to make an ice cream cake, and this was definitely a learning experience for me!

I started out by making my VERY FIRST white cake from SCRATCH! Oh my goodness.... It was delicious. I don't think I'll ever go buy another cake box again. And it was so simple! 

So once I had my cake made, in my 2 8inch round pans, I let them freeze for about 30 minutes before slicing them in halves to make 4 layers of cake. Now.. This was my first mistake. I should have popped those bad boys back in the freezer for a little longer when I could feel the cake being a little spongy. 
If I would have done that, I think I would have seen the white layers of my cake rather than the Raspberry Sherbert Ice cream that ran through the cake, coloring it all pink!

I used a spring loader pan to hold my cake layers together while they froze with the sherbert between the cake. 

Once I took it out of the freezer and unfastened the pan, I was left with this:

Looked a little ugly, but I wasn't complaining when I could taste how sweet and rich the cake was.

I then frosted it with another frosting recipe I tried from the Taste of Homes book.


And then I had to make it a little pretty.... We only had a box of Sprees in the cupboard when I went scrounging in the pantry for something decorative.



Andddd Wa-La!



It wasn't very pretty, but it was still yummy!

Oh, and on a side note... Ice Cream cakes aren't meant to be consumed the next day... Invite some friends over to help you eat it up in one night so it doesn't get freezer burnt! Yuck!
